Healthy Avocado Salad
Avocados are the best type of fruit to add to any dish. They are delicious and they have so many health benefits!
According to a journal article, “Avocado, Charateristics, health benefits, and uses” published by Duarte et al, they state that avocados are very healthy due to its components such as omega fatty acids, and vitamins (K, B6, potassium).
So essentially what I’m saying is that if you don’t eat avocados, then you’d should!
These 2 healthy avocado salad recipes are super easy to make. It’s a nice, light and healthy meal for lunch or dinner! It takes between 15-20 min to prepare and it so worthhhhh it. So get ready to read and create your healthy avocado salads! ENJOY!
Ingredients List – Salad
- Lettuce
- Baby Spinach
- Shrimp (peeled) or pre-cooked shrimp or Chicken Breast
- 1 Avocado
- Shredded Mozzarella cheese or any cheese you like
- Mango (optional)
- Craisins (optional)
- Nut (cashews, peanuts etc.)
Recipe
1. Stir-fry shrimp and/or chicken breast
First, start with your shrimp or chicken breast. I season my shrimp and/or chicken with maggi, thyme, cayenne pepper or with a scotch bonnet pepper. Lol I like spice….but for those of you that what something very simple you can season with salt and black pepper to taste.
Heat up 1 tbsp on olive oil in a medium sized fry pan and cooked seasoned shrimp and/or chicken breast. Cook for about 7 minutes or tolled slightly browned.
If you want a bigger salad add both chicken and shrimp!
Tip: if you using chicken breast slice them very thinly so that when added to your salad they are not so big and overwhelming
Tip: For those of you who are looking for a quicker meal, don’t hesitate to use pre-cooked shrimp. Still tastes good!
2. Cut up lettuce, avocado + any additional ingredients
Next, prep all your ingredients. Cut up all your lettuce, dice up avocados, slice up the mangos, and shred your cheese.
3. Assemble Salad
In a large bowl, start with your lettuce and spinach. Add in the shrimp/chicken breast, avocado, mangos. Lol don’t forget the cheese! Top with any craisins or nuts.
Drizzle with dressing and then toss to mix everything up! Voila salad is ready.
